As many authors reported for pea protein products (Shand et al. 2007, Adebiyi and Aluko 2011, Ladjal-Ettoumi 2015), the alkaline-soluble proteins (i.e. the ones recovered through the pH-shifting process) exhibit a typical bell-shaped curve, with a minimum solubility index around the isoelectric point (4.5–5.0) and maximum values under alkaline (pH 8) and very acidic (pH 2) conditions.	cache/afs-137722.pdf	txt/afs-137722.txt
