(1994), Joo et al. (1999) and Joo et al. (2000a 2000b) that the initial and ultimate pH values were not always a reli- able predictor for ultimate pork quality and its relation to both color and WHC of pork muscle should be more care- fully investigated, although it is evident that pH values are significantly related to both colour and WHC (Table 2).
