Results 3.1 Quantification of total extractable polyphenols from hazelnut skins and of extraction time The total amount 𝑞𝑡𝑜𝑡 of extractable polyphenols per mass of solid matrix was calculated through a mass balance extended to all the extraction cycles of each test as follows: 𝑞𝑡𝑜𝑡 = 𝑉𝐿 𝑀𝑆 ∑ 𝐶𝑖 𝑁 𝑖=1 = 1 𝛼 ∑ 𝐶𝑖 𝑁 𝑖=1 (1) where 𝑉𝐿 and 𝑀𝑆 are the liquid volume and the solid mass loaded at the beginning of the test, respectively, and 𝐶𝑖 is the concentration of polyphenols in the aqueous solution at the end of the 𝑖-th cycle of the test; the ratio between 𝑉𝐿 and 𝑀𝑆 coincides with the reciprocal of the solid liquid ratio 𝛼.
